Accounts, Google sign-in, and what happens to your data.
If you choose Continue with Google, Google authenticates you and Epic Gains receives the sign-in data needed to run your account—this is separate from browsing the app without an account, where no Google data is requested.
For Google sign-in we request access to basic profile details Google provides for OpenID Connect sign-in: your Google account identifier, email address, and name (and, when available, a profile image URL). We use this information only to create or log you into your Epic Gains account, display your identity in the app, and sync your workout logs, routines, journal entries, and related preferences you save in the Service across your devices.
We do not use Google sign-in to read your Gmail, Google Drive files, or contacts. If you later connect Google Health from Settings, Google will ask you in a separate authorization step for read-only access to activity and fitness data you approve; that step is optional and only when you start it.

No. You can open the app and use it without signing in. Creating an account (including with Google) is optional and lets you sync workout logs, routines, and preferences across your devices.
Stop journaling in the Notes app.
Open it once. If you don't like it, your Notes app will be there when you get back.
